This tea is harvested from the deep mountainous region in Dong Ding. The altitude is at 900 meters measured with the iPhone Compass App. The plantation is quite remote compared to most Dong Ding plantations, making this a very clean tea even though not certified organic.

 

The name "Dong Ding" (凍頂), unlike what people popularly believe means the "frozen top," was actually a name given by local Hakka people at the end of 19th century. The original name was "Dung-den" (崠頂) in local Hakka culture which literally means "the top of the hill," but was misheard by the Taiwanese (although Taiwanese as an national identity was not formed yet) since the names sound very similar. As time went on, this mistaken understanding eventually became "Dong Ding" rather than the original "Dung-den."

 

The processing of this tea was very true to the spirit of traditional Dong Ding. We were so surprised we immediately asked who processed the tea. "My dad, this one was done by my dad.", answered Mr. Zhou. We pretty much got the whole production for our collection since we are not sure when will we be able to have another result like this again. 

 

So this tea was not processed to fit the "competition standard". It was simply processed by a person who loves tea and indulges his whole life into it like we do. Please do no expect a super high aroma when you first encounter this tea like other Dong Ding tea. Instead, please pay attention to its long lasting flavor and mouthfeel even with its quite strong roasting style.

Recommended Preparation:

Amount of Tea: 1 gram to 18.5 ml of water (1ml = 1g by weight)

Temperature: Boiling, 212°F
Steeping Times : 1st Infusion - 3 minutes, 2nd Infusion - 3 minutes, 3rd Infusion - 4 minutes

 

By following this method, you should have an accurate profile this tea and may adjust the steeping times to your preference. Please note that this method does require boiling water so ensure your water is as hot as possible.
